The holidays are over and that means it's time to eat right and try to be healthy! Since we travel so much, we often try to bring snacks with us on flights. Here is a great healthy recipe that travels well and will keep you happy while you watch movies on that nine-hour flight!
"Time to Fly" Granola
6 cups quick-cooking oats
1⁄2 cup brown sugar (or maple sugar)
3⁄4 cup wheat germ or bran
1⁄2 cup dried fruit1⁄2 cup sunflower seeds (or sesame seeds)
1 cup nuts
1⁄2 cup safflower oil
1⁄2 cup maple syrup, sweetest version.
Toast the oats in a 350 degree oven for 15 minutes. In a large bowl add all ingredients and stir well. Spread mixture on a cookie and bake for 20 minutes (or until dry and crunchy) at 350 degrees.
We tend to add more nuts and seeds than the recipe calls for and we often mix in a few chocolate chips after baking and cooling. The kids like the added chocolate or at least that's the story we are telling! LOL!
Because we love it so much, this granola will be part of our new breakfast at La Chiusa, the boutique hotel we just purchased in Tuscany which will be home to our Cook In Tuscany cooking school as well. We hope to see you there.
