Sopa De Cilantro
Fresh Cilantro Soup
2 Cups milk
2 Bay Leaves
2 Tbsp butter
1 tsp oil
½ cup onion chopped
5 cups cauliflower
3 cups fresh cilantro
4 cups chicken stock
½ cup Crema Mexicana
1 cup ranchero cheese in cubes
Bring milk and bay leaves to a
Melt butter with oil over medium heat in a heavy pan.
Add onion until translucent. Add cauliflower, milk, and 1 cup of chicken stock.
Cook for 10 minutes or until soft. Let cool.
Remove bay leaves, blend cauliflower until smooth.
Cook cauliflower over medium heat.
Blend the cilantro with remaining chicken stock and pour over cauliflower mixture, stir in cream.
Serve with Cheese cubes
